This was a really surreal project. Recovering that old premises meant throwing layers and layers of old, rotten ceilings, old obsolete air conditioning systems, and discovering that many of the stones in the structure were broken. But after curing all that structure, the priceless contributions of William Spear and Marti Guixé turned out to be an innovative project like never seen before: Vegan Fast Food. Elegant and rabidly modern.
